Happy Pi Day! I was thinking about what kind of recipe I wanted to share for Pi(e) Day, and then I realized that I have SO. MANY. PIE. RECIPES. on the blog already! From galettes, to hand pies, I’ve got a little of everything.
So, without further ado let’s get to the good stuff!
My top picks for Pi(e) Day:
Caramel Apple Turnovers: Little pies that you can eat with your hands! WIN! Did I mention the caramel and apple filling? DOUBLE WIN! Plus, you get to eat more pie crust this way.
Mixed Vegetable Galette: This is one of my favorite non-traditional types of pie – a galette! It’s quicker to make than a traditional pie, but it’s still delicious! This one happens to be filled with veggies, for a healthier way to celebrate Pi(e) Day!
Cherry Cobbler for Two: A perfect way to celebrate Pi(e) Day without making an ENTIRE pie. Because sometimes, just a serving or two will do! Plus, the crust can be customized with any kind of cute cookie cutter!
Chocolate Cherry Cheesecake: I know, I know – the recipe says “cheesecake” – but we’ve always made this in a pie dish rather than a springform pan, so to me it counts as pie. Besides, are you really gonna argue against making and eating something that’s full of chocolate, cherries, and deliciousness? Oh, and it’s probably the simplest cheesecake recipe ever!
Chocolate Pecan Bourbon Pie: A classic pie! I made this for Thanksgiving and it was a huge hit! Chocolate + bourbon – you are what pecan pie has been missing!
Giant Chocolate Chip + Peanut Butter Cup Cookie Pie: Whether you want to call this a giant cookie, a cookie cake, or a cookie pie is up to you! The fact remains – it’s a big round circle full of delicious dessert, and it has most certainly earned a place in this Pi(e) Day lineup!
Peach Nectarine Galette: Another galette, because, well, galettes are amazing. Easy, quick, and rustic looking – huge win! This one is filled with delicious summer fruits – which will be back in season SO SOON and I am SO EXCITED! Can’t wait to make this all summer long!
Grilled Flatbread Pizzas: Pizza – a different kind of pie. Try these ones, made with my homemade naan bread. They’re simple and so easy to customize with any toppings! My favorite combo is arugula, bacon, goat cheese, and a little honey!
Pumpkin Pasties: Because we need to celebrate our love for Harry Potter AND Pi(e) Day at the same time. Duh. Besides, who doesn’t love a good hand pie!
Cherry Hand Pies: Are you seeing a theme here? I love cherries, I love hand pie, I love cherry hand pies! These are the first pie recipe I ever posted on my blog! They’re probably Grant’s favorite pie on this list, too.
