This is probably the easiest dinner you’ll ever make. No joke – it only takes bell peppers, pineapple, chicken, onion, and a handful of spices. It’s a little dinnertime-miracle in a pan. Take the photo above – add 25 minutes, and —
But, in all seriousness – I want to share recipes that you will ACTUALLY make and that you will LOVE – and I think this fits.
I love a “fancy” meal just as much as the next person but then there’s real life. And sometimes you don’t have time/energy/fill in the blank to make those kinds of meals.
That’s when things like this become our go-to. 10 minutes of prep and 25 minutes in the oven. That’s totally doable, right?
Plus, I loveeee making a dinner were the veggies + protein cooks TOGETHER – it’s one less step. This one also happens to have fruit sooo I think we’re covering all the food groups here. Oh, this has barbecue sauce too – which according to Grant is another food group sooo 💁🏼
And aren’t these veggies just GORGEOUS?? They make me feel all colorful + happy + healthy. That’s exactly what I think a good meal should do for you. And healthy does not need to mean lack of flavor – no sir.
You will definitely not find that with this meal. It’s got a little kick from the chili lime seasoning and the paprika. Don’t worry fellow-non-spicy-friends, it’s not scary and it will not set your mouth on fire. Promise.
Juice from the pineapple sort of melts over the whole pan, giving the veggies and chicken some extra tang. Plus, barbecue sauce. Yes – just a few dollops, but it makes a big difference.

- 1 1/2 lbs chicken breast, cut into chunks
- 1/2 yellow onion, sliced
- 3 bell peppers, cut into chunks
- 1 can cubed pineapple, liquid drained
- 1/2 tsp salt
- Pinch of pepper
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- 1/2 tsp chili lime seasoning (we got this from Trader Joe’s but if you don’t have this you can use 1/2 tsp of chili powder and a teaspoon of fresh lime juice)
- A few tablespoons of your favorite barbecue sauce
Preheat oven to 400 degrees. Spray a baking sheet with cooking spray.
Put chicken chunks, onion slices, pepper chunks, and pineapple on the baking sheet. Mix all the spices together in a small bowl and pour over the ingredients on the pan. Toss all ingredients to coat evenly with the spices (using tongs works well for this, or a spatula). Make sure the ingredients are in a semi-flat layer on the pan. Bake for 15 minutes. Remove pan from the oven and add a few dollops of barbecue sauce. Stir ingredients to incorporate the barbecue sauce and return to the oven for 10-12 minutes. Serve over rice, plain, or in a tortilla!
