This Overnight French Toast Casserole comes together quickly with minimal prep and simple ingredients like brioche bread, eggs, milk, cinnamon, and maple syrup! Mix up your custard in a blender for ease, and bake this casserole to golden brown perfection after resting it for 2 hours or overnight. Serve with fresh berries and maple syrup!

This French Toast Casserole (or bake) is SO easy to make – and I’m sharing my new favorite trick to make it with you today. Using a blender makes this recipe so easy – I’ll show you why!

How to Make French Toast Bake (or Casserole)

Start by making the custard. This is just a fancy term for the mixture of eggs and milk that we’re going to pour over the bread. Add your eggs, milk, a splash of maple syrup, cinnamon, nutmeg, and vanilla to your Oster 800-Watt Power Blender with Touchscreen Controls & Auto-Programs. Power the blender on and select “low” from the easy-to-use touchscreen controls to blend everything together.

How do I avoid Eggy French Toast?

This is what the custard mixture will look like once it’s blended up. I love using a blender for this french toast casserole because it ensures that the eggs are well beaten and you won’t have any big goopy spots of egg white in your french toast.

Assemble the French Toast Bake:

Spray a 9×13 baking dish well with nonstick spray. Layer your bread in sort of a shingle pattern in the dish. Pour the custard mixture over the top of the bread, making sure to get it on all the exposed parts of the bread as best you can. I also sprinkled on a little bit of brown sugar mixed with cinnamon for some extra texture and flavor. You can skip that step if you like, but it is tasty! Below is what the french toast will look like before it’s baked.

What Bread do I use for a French Toast Bake?

I used brioche, but something like challah would work well too. I recommend using something similar to these types of bread where the slices are a bit thicker, as opposed to your standard sandwich bread. Stale bread is preferred here, too, so that you don’t end up with soggy french toast once it’s baked. If your bread is fresh, you can toast it in the oven for 6-10 minutes at 350 to help it stale up a bit.

Do I have to let my French Toast Casserole rest overnight?

No, it doesn’t have to rest overnight. But, it should rest for at least for 2 hours in the fridge, to give the bread time to soak up all the liquid. You can leave it in the fridge, covered, overnight or bake after 2 hours. 

Bake & Serve the French Toast Casserole: 

Cover the baking dish and let it rest in the fridge overnight so the bread can really soak everything up. In the morning, preheat your oven to 350 degrees F, and bake the casserole for 25-30 minutes. The photo above is what it’ll look like once it’s baked.

Serve this with a dusting of powdered sugar, and fresh blueberries, blackberries, or strawberries. Or use a mix of all three! I also sprinkled on some slivered almonds, but you can certainly skip that if you don’t like nuts. Oh, and don’t forget the maple syrup!

Overnight French Toast Casserole

Ingredients

  • 4 large eggs
  • 1 and 1/4 cups milk
  • 2 tbsp real maple syrup
  • 1 tsp cinnamon
  • 3/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1 tsp vanilla extract
  • 1 and 1/2 lbs brioche bread Or something similar like Challah, see notes

For Serving:

  • maple syrup, powdered sugar, fresh berries, slivered almonds

Instructions

  • Prep: Grease a 9x13 baking dish with nonstick spray. If your bread is very fresh, you may want to toast it in the oven first to avoid a soggy french toast bake. Lay the slices in a single layer on two baking sheets, and bake at 350° F for 6-10 minutes, just until they feel toasted and crisp.
  • Make the Custard: Add the eggs, milk, maple syrup, spices, and vanilla to your Oster Power Blender with Touchscreen Controls. Press "on" and then touch the "low" button to blend on low just until everything is combined, about 30 seconds.
  • Assemble your French Toast Bake: Lay the bread slices in a sort of shingle pattern in the baking dish. Pour the custard over the top as evenly as possible, getting every part of the bread wet. Cover and let rest in the fridge for at least 2 hours and up to about 8-9 hours overnight.
  • Bake: In the morning, preheat your oven to 350° F and bake the French Toast Casserole for 25-30 minutes. The casserole should appear baked and the centers of the bread appear set, and there should be no liquid evident in the bottom of the pan.
  • Serve + Store: Serve warm from the oven with powdered sugar, fresh berries, and maple syrup. Keep leftovers in the fridge for 3-4 days.
