It’s Sunday again! The weeks have been flying by – does it feel that way for you too?? Spring is definitely here and it feels like we’re verging on summer already with the warm temperatures!
I just want to buy all the spring flowers at Trader Joe’s and fill our apartment with them! But, flowers die and that makes me sad. Maybe I can get some super realistic looking fake ones? I do have some potted plants that I’ve managed to keep alive since February, so that’s something to celebrate!
Which reminds me, it’s about time for me to plant my little baby herb garden out on our balcony! Last year I had basil, parsley, thyme and rosemary. Is there anything I should add this year? I’d love to hear from those of you with Green Thumbs!
This week, I’m sharing some favorite things from the week along with a recipe recap and a recipe sneak peak! There’s also going to be a different type of post coming next week that isn’t a recipe – and it isn’t a coffee break post!

Recipe Recap:
- Loaded Sheet Pan Nachos – The perfect weeknight pick-me-up and it’s totally customizable to whatever toppings you like/whatever you have in your pantry!
- Skillet Caramel Stuffed Chocolate Chip Cookie – The most indulgent dessert – but it’s still easy to make! A gooey layer of caramel sits inside two layers of chocolate chip cookie dough in this giant cookie. YUM!

One Pan Garlic Butter Salmon with Asparagus and Potatoes – The best dinners are ones that require only a few ingredients, and less dishes! This is that recipe – and who doesn’t love some fresh veggies and salmon in the spring?
Odds and Ends:
The best thing I ate this week: We found an amazing ice cream shop in town called Chocolate Shoppe Ice Cream Co. and they have the most delicious ice cream!
Grant had Kitty Kitty Bang Bang – raspberry cheesecake ice cream with oreo chunks (sounds weird but it was good!) and I had Sticks and Stones – chocolate ice cream with cookie dough, chocolate covered pretzels, and salted caramel.
I have a feeling we will become regulars here ?.
The worst thing I ate this week:Â We’ve probably all seen recipes floating around on the internet for “healthy” edible cookie dough made with chickpeas – I finally caved and made some the other night, and it was GROSS. Like, not only did it not taste like cookie dough, the texture was also super funky. No thanks! (Hopefully this doesn’t become a regular installment, but I just had to share this!)
Notice the few sad chocolate chips floating in there? I only threw a handful in to test the waters first. Good call – chocolate chip-wasting disaster averted.
Dying to try: this Pistachio Peach Caramel Crumble from How Sweet Eats – can it just be summer already?!? I’m dying to get my hands on some fresh peaches!
Also, these Coconut Flour Pancakes from Well Plated – It’s been TOO LONG since we’ve made pancakes!
Dad’s new bike: My dad got a new bike (a red bike, as he specifically requested) for his birthday and I think he’s a little excited about it. My little brother sent me this picture the other day at Dad’s request. Apparently the red bike ornament we got him for Christmas wasn’t good enough, but whatever ?.
(Don’t mind that black smudge – I colored out my parent’s neighbors house to protect their privacy!)Â
Anastasia is coming to Madison!!!! I just found out that the broadway performance of Anastasia and The King and I are coming to the Overture Center in Madison next season and I am SO excited. The rest of their line-up looks pretty good, too so maybe I can convince Grant to get us a season pass! I’ll just have to keep him from finding out that they’re musicals….
Old movie obsession:Â I’ve been obsessed with old movies for as long as I can remember, and I’ve been watching some amazing ones lately! Some of my favorites are Rear Window, Vertigo
, Walk, Don’t Run
, and (this one isn’t as old, but it’s just as good) Field of Dreams
.
What is it about baseball movies that I cannot get enough of them? They have a special sort of magic in the stories they tell and it’s my favorite!
Sneak Peak:
There’s going to be some yummy recipes coming next week including pizza, apple crisp, and something special that isn’t a recipe!
