I’m doing something a little different today – It’s not a recipe post! I thought it might be fun to do a post each Sunday that’s just about my life! I’ll share the interesting (or boring) things we did during the week, recap the recipes I posted during the last week, and probably share some things that I’m crushing on – like recipes from other blogs, a new board game we’re loving, or whatever else pops into my brain!
So, if you don’t want to hear about my life, just pass on by! ? Otherwise, grab yourself a cup of coffee (or hot chocolate because I don’t know about you but it’s SNOWING fervently here!) and read on!
Weekly Recipe Recap
Here are the three recipes I shared on the blog this week!
- Gnocchi Bacon Mac ‘n Cheese – YES. The winner of all mac ‘n cheese recipes. Extra cheesy, loaded with bacon, and gnocchi is just an absolutely amazing little ingredient.
- The Best Homemade Maple Granola – A super simple and versatile recipe for yummy homemade granola! It tastes (and smells) like spiced oatmeal cookies! (I’ll be sharing a recipe this week with my favorite way to use this granola, so keep an eye out for that!)
- Quick Breakfast Tacos – Because I have been majorly obsessed with tacos lately! These take about 15 minutes to throw together, they’re vegetarian and gluten-free and are ridiculously delicious!
I’d love to know if you try any of these recipes! I’m wishing I had a hot bowl of that mac ‘n cheese right now to enjoy on this cold day.
Dells Trip!
Last weekend, we went on a little trip to the Wisconsin Dells with my family! We have taken a trip to the dells (almost) every year in the winter/spring and Grant had never been before.
The waterparks aren’t necessarily geared towards 20-somethings, butttt, we had plenty of fun anyways! I think the nostalgia helps ?. We stayed at the Wilderness, which has plenty of “big-kid” water rides and slides, and a plethora of hot tubs! Oh, there was also a swim-up bar which was pretty fun and made us feel real fancy. We had a SUPER yummy watermelon cocktail at the bar that I totally want to re-create for the blog!
And, yes, that is my little brother creepin’ behind our ice cream cones! Can we talk about the fact that I went to the Dells and the only pictures I got were of our ice cream cones?? Oops!

Brunch in the Snow
This morning, we ventured out into the snow (!!!) to get our breakfast food on. Ron Swanson and Leslie Knope would be proud.
They would be even more proud, probably, if they saw the place we had brunch at.
This place is called Short Stack Eatery, it’s in Downtown Madison and it’s fabulous! I got a short stack of gluten-free pancakes, which were scrumptious and Grant got chocolate chip pancakes! Um, and he also got a breakfast burrito because BOYS EAT A LOT.
He may eat me out of house and home, but isn’t he the cutest?! ?
Weekly Favorites:
I’ve been obsessed with this guinness brownie recipe from Sally’s Baking Addiction for the past few weeks! I even made a batch to take to the Dells last weekend.
Do you use a day planner to keep track of your life? I’ve used planners on and off in the past, but I haven’t used one for a few years. I’ve been keeping track of my to-dos in my phone but I’m starting to feel like I’m TIED to my to-do list, so I’ve been shopping around for a planner! This week I found a planner that has all the bells and whistles I wanted – it’s called the Day Designer (affiliate link).
I haven’t taken the plunge and bought it yet but I think I probably will! Do you use a planner? What kind of features do you look for in a planner? I’d love any recommendations!
And lastly, we’ve been playing a lot of Dutch Blitz (affiliate link) this week! It’s literally THE ONLY GAME I can ever beat Grant in! He is pretty competitive when it comes to games (video, card, board, you name it) and he ALWAYS wins in every game we play – except this one. It’s a super fun, fast-paced card game that’s easy to learn. Have you ever played it?
Snow Day….in April!
As you can see, only one of us is happy about the snow. Yes, I know it’s an unpopular opinion but I love snow! Even if it is getting a little old at this point.
When I woke up this morning and saw the snow, I immediately thought of The Lion, The Witch and The Wardrobe! It’s a great movie – if you’re unfamiliar with it, it’s about 4 children who travel through a wardrobe to the magical land of Narnia. An evil witch has cursed Narnia with an endless winter – and there’s a line in the movie that goes, “It’s always winter, but never Christmas!”
That’s exactly how I feel right about now, on this snowy day smack dab in the middle of April. I think I’m going to spend the remainder of this day cuddled up on the couch, watching that movie, and reminding myself that Spring will come – even if it comes a bit later than we’d like it to. How do you like to spend your snow days?
I’ve got some spring-y recipes coming up this week, which will maybe help encourage the weather in the right direction?! If not, at least we can eat tasty food while we’re snowed in!

Winter will not go away. However, I love the idea of a coffee break. I enjoyed reading this post. Looking forward to reading more. I’ve never been to Wisconsin Dells but it sounds amazing, and the good also looks great!!! I also have not had gnocchi Mac and cheese- gotta try it. Sally’s baking blogs has tons of great recipes, her book is also great too. I’m looking forward to reading the next coffee break post.

Oh my goodness! Seeing that snow and the slippery sidewalk reminds me of those days in the snow and I don’t miss them. The only thing I miss about the snow was looking through the window and seeing the snow on the trees and on the grass :). I love those recipes but I think my favorite will be the breakfast tacos. Thanks for the glimpse!

The Wisconsin Dells is a town in Wisconsin that is full of indoor and outdoor waterparks at different resorts! I think its been dubbed “America’s Waterpark Capital” or something similar haha! It was a fun week ?
