Beer Braised Short Ribs w/ Cheddar Mashed Potatoes

Beer Braised Short Ribs are fall-apart tender and flavorful! They’re easy to make and perfect to pair with fluffy cheddar mashed potatoes for a holiday dinner or fancy date night at home.

Step 1: Brown the Ribs and Sauté the Veggies. First, season and sear the beef in a dutch oven.

Remove the ribs and set aside. Next, sauté the onions, carrots, and garlic in the pot.

Step 2: Finish Cooking. To the pot add ribs, beer, and broth. Braise in the oven for 2+ hours.

Step 3: Make the Sauce. Remove beef. Blend veggies and liquid and add back to the pot.

Simmer 30 minutes to thicken the sauce. Add the ribs back to the pot and simmer to reheat.
