Chewy Pumpkin Snickerdoodles

These easy coookies are made in one-bowl, with no pumpkin blotting required!

Whisk together melted butter, pumpkin, sugars, egg, and vanilla. Stir in the dry ingredients & pumpkin spices.

Chill dough for 30 minutes then roll into balls. Roll in cinnamon sugar.

Bake on a lined cookie sheet at 350 degrees for 10 minutes. Let cool a few minutes.

Make a quick optional caramel sauce to top your pumpkin cookies!
