Double Strawberry Pancakes

Strawberry Pancakes are ultra fluffy and buttery soft. They’re filled with fresh strawberries and topped with a luscious 10-minute strawberry compote. This recipe is perfect brunch or  breakfast for dinner!

Step 1: Make the Compote. Cook the ingredients in a saucepan. Let cool.

Step 2: Mix Wet Ingredients. Whisk melted butter, buttermilk, and egg.

Step 3: Stir in Dry Ingredients. Slowly add the flour etc to the wet ingredients.

Step 4: Cook the Pancakes. Spoon batter onto a hot griddle. Add strawberry slices. 

Cook for 1-2 minutes on each side, until the pancakes are fluffy and golden underneath.
