Homemade Lime Curd (15-minute recipe!)

Luscious lime curd made on the stovetop - & no separating eggs!

Step 1: Juice fresh limes - you'll need 3/4 cup of juice.

Step 2: Rub lime zest into granulated sugar. 

Step 3: Then, whisk in lime juice, eggs, and salt. 

Step 4: Cook for 4-5 minutes, until thickened. 

Step 5: Strain lime curd through a sieve so it's completely smooth.
