Irish Cream Pumpkin Cheesecake Bars

Let's Bake Pumpkin Cheesecake Bars!

Step 1: Make the Crust. Combine the gingersnap cookie crumbs, melted butter, and salt. Press into a 9x9 pan and bake for 10 minutes at 350° F. Set aside to cool while you prepare the filling.

Step 2: Make the Cheesecake Batter. Cream the cream cheese and blend in sugar, eggs, vanilla, pumpkin, spices, and Irish cream. You'll have a smooth, slightly runny batter.

Step 3: Bake the Cheesecake Bars. Pour the batter over the par baked crust and bake for 38-42 minutes at 350° F. The edges will appear to be set, and the center will have a slight jiggle.

Step 4: Make the Irish Whipped Cream. Beat the heavy cream, powdered sugar, vanilla extract, and Irish cream together in a bowl, just until stiff peaks form. Do not over mix!
