Ricotta Toast with Figs and Honey

This Whipped Ricotta Toast is a delicious breakfast or snack that you can whip up in 10 minutes! Fresh sourdough bread is toasted and topped with creamy ricotta cheese, fresh figs, and honey. It can be customized to whatever toppings you like, too!

Ingredients

For the Whipped Ricotta

  • 1 cup whole milk ricotta cheese
  • 1 tbsp olive oil
  • 1-2 tbsp heavy cream or milk
  • generous pinch salt + pepper

For The Toasts

  • 4 slices good-quality sourdough bread
  • 4-6 large figs
  • honey
  • fresh basil
  • flaky sea salt

Instructions

  • Make the Whipped Ricotta: Add the ricotta, olive oil, milk or heavy cream, and a generous pinch of salt and pepper to a small bowl. Whisk for a minute or two, until the ricotta becomes light and whipped.
  • Assemble the Toasts: Toast your bread in the toaster or in a skillet on medium heat, or on a baking sheet in the oven. Spread on the whipped ricotta, then add your toppings. I sliced my figs vertically into 2-3 slices each. Add them to the ricotta, then add a few fresh basil leaves, a drizzle of honey, and a sprinkle of flaky sea salt to each piece of toast.
  • Serve + Store: Enjoy immediately! This is best made and eaten right when it's made. Whipped ricotta can be stored in an airtight container in the fridge for up to a week.
