A stunning winter salad filled with greens, pomegranate, pears, and oranges - and finished off with walnuts, feta cheese, and a delicious 4 ingredient dressing! So quick + delicious! Double or cut the recipe in half, as needed.
2mediumripe pears, slicedBartlett and Anjou work well!
3smallmandarin oranges, peeledoften called "cuties" in grocery stores
1/2cupwalnutswhole or chopped
1/3cupfeta cheese
For the Dressing:
1tbspapple cider vinegaror 1-2 tsp lemon juice, if you don't have ACV
1.5tbspolive oil
1tbsphoney
1tbspwater
1tsphoney mustardor dijon, if you prefer it
Instructions
Make the dressing: Shake all dressing ingredients in jar with the lid tightly secured, or whisk together in a small bowl, until well combined.
Assemble: Toss all ingredients together in a large bowl. Add the dressing just before serving. You can always double the dressing, if you really like dressing!
Serve & Store: Serve immediately once you've dressed the salad. Store leftovers in the fridge for 1-2 days.
Notes
NOTE: This salad is so customizable! Swap walnuts for pecans if desired, and add more or less cheese according to your taste.
