Watermelon Nectarine Salad with Feta and Honey Lime Dressing

Sliced, juicy nectarines and watermelon, a sprinkle of feta, and a dressing made of honey and fresh lime juice make up this delicious side.

Ingredients

  • 1 large ripe watermelon
  • 4 medium ripe nectarines
  • 1/3 cup feta cheese

Honey Lime Dressing

  • 4 TBSP olive oil
  • 4 TBSP lime juice
  • 4 TBSP water
  • 4 tsp honey
  • small pinch of salt start small - you can always add more

Instructions

  • Prep: Slice your watermelon into cubes, discarding the rind. Slice your nectarine, discarding the pits. Toss fruit together in a large serving bowl. Whisk together the dressing ingredients.
  • Assemble + Serve + Store: Pour the dressing on just before serving, and then sprinkle on the feta. Store leftovers, tightly covered, in the fridge for 2-3 days.
