Frozen Cranberry Daiquiris

These Frozen Cranberry Daiquiris are the perfect summertime drink! Made with just 4 ingredients - an easy cranberry simple syrup, vanilla rum, fresh lime juice, and ice. Blend everything up and enjoy this refreshing, cold summer cocktail any day of the week!

Ingredients

For the Cranberry Simple Syrup

  • 1 cup fresh or frozen whole cranberries *If using frozen, don't thaw them first.
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1/4 tsp vanilla extract

Frozen Cranberry Daiquiris

  • 6 ounces vanilla rum Or your favorite type of rum
  • 4 and 1/2 ounces of the Cranberry Simple Syrup
  • 1 and 1/2 ounces freshly squeezed lime juice
  • 2 and 1/2 cups ice cubes (about 30 ice cubes)

Instructions

  • Make the Cranberry Simple Syrup: Add the cranberries, sugar, water, and vanilla to a medium pot over very low heat. Cook over a bare simmer, stirring frequently, for 20 minutes. The cranberries will be very soft and the liquid will be a bit thick but shouldn't have anything close to a cranberry sauce or jelly consistency. It's very important to keep the heat low here so you don't overcook the mixture and turn it into cranberry sauce.
    Once the 20 minutes are up, remove the pot from the heat. Strain the mixture into a jar, pressing on the softened cranberries to squeeze the last bits of juice out. Discard the cranberry skins. Pop the cranberry simple syrup in the fridge to chill (about 15-20 minutes).
  • Make the Daiqiuris: Add the vanilla rum (or rum of your choice), cranberry simple syrup, lime juice, and ice to your blender. Blend until everything is combined and frothy.
  • Serve + Store: Serve immediately! Pour into glasses and garnish with skewers of fresh cranberries, if desired. This recipe makes 3 larger or 4 slightly smaller drink as written. You can also make just 1 drink at a time using 2 ounces of rum, 1 and 1/2 ounces of the simple syrup, 1/2 ounce of lime juice, and about 10 ice cubes. Leftover cranberry simple syrup can be stored in a jar in the fridge for about 1-2 weeks.
