Soft and Chewy Nutella Swirled Cookies with Nutella Frosting

These irresistible cookies are made with swirls Nutella throughout the cookie dough, and are baked to soft, chewy perfection. Decorate these with a silky (and easy!) swirl of two-ingredient Nutella frosting. These are so simple to whip up with your family for a fun baking project.

Ingredients

For the Cookies

  • 1 cup Country Crock Plant Butter (2 sticks or 226 grams)
  • 3/4 cup brown sugar, packed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 and 2/3 cups + 1 tbsp all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup Nutella

For the Nutella Frosting

  • 2/3 cup Nutella
  • 3-4 tbsp powdered sugar

Instructions

  • Make the Cookie Dough: In a large mixing bowl, cream the butter, straight from the fridge - it's naturally soft enough!, on high speed with an electric mixer. Add the granulated and brown sugars and mix until well creamed together with the butter. Add the vanilla and eggs and mix until just combined. Add the dry ingredients and mix until a dough forms (it may be a bit crumbly at first, but just keep mixing until it comes together. Add the Nutella last, and mix just until it's swirled through the dough - we're not completely mixing it into the dough.
  • Chill: Cover your bowl with plastic wrap or a clean kitchen towel, and chill at least 2 hours or up to 3 days in the fridge.
  • Bake: Preheat your oven to 350° F. Line a few cookie sheets with parchment paper or silicone baking mats.
    Scoop the chilled cookie dough into balls about 2 tablespoons or 45-50 grams in size. Place cookie balls a few inches apart on your prepared baking sheet (I can fit about 6 on a sheet - they'll spread a bit when baking so don't crowd them).
    Bake for 10 minutes. The centers of the cookies will look a bit underdone when you take them out (but the edges should be set when you gently tap them), but this is normal! They'll set up to the perfect soft-baked texture as they cool. Let cookies cool on the baking sheet for about 5 minutes, then transfer to cooling racks to finish cooling. (Or enjoy them while they're still warm, after letting them set up for about 5-10 minutes.)
  • Serve + Store: Stir together the Nutella and powdered sugar for your frosting, and spoon it onto the cookies. Use the back of a spoon or offset spatula to create swirls. Dig in! Store leftovers in an airtight container at room temp for 3-4 days.
