Overnight French Toast Casserole

This Overnight French Toast Casserole comes together quickly with minimal prep and simple ingredients like brioche bread, eggs, milk, cinnamon, and maple syrup! Mix up your french toast custard in a blender for ease, and bake this casserole to golden brown perfection the next morning. Serve with berries and syrup!

Ingredients

  • 4 large eggs
  • 1 and 1/4 cups milk
  • 2 tbsp real maple syrup
  • 1 tsp cinnamon
  • 3/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1 tsp vanilla extract
  • 1 and 1/2 lbs brioche bread Or something similar like Challah, see notes

For Serving:

  • maple syrup, powdered sugar, fresh berries, slivered almonds

Instructions

  • Prep: Grease a 9x13 baking dish with nonstick spray. If your bread is very fresh, you may want to toast it in the oven first to avoid a soggy french toast bake. Lay the slices in a single layer on two baking sheets, and bake at 350° F for 6-10 minutes, just until they feel toasted and crisp.
  • Make the Custard: Add the eggs, milk, maple syrup, spices, and vanilla to your Oster Power Blender with Touchscreen Controls. Press "on" and then touch the "low" button to blend on low just until everything is combined, about 30 seconds.
  • Assemble your French Toast Bake: Lay the bread slices in a sort of shingle pattern in the baking dish. Pour the custard over the top as evenly as possible, getting every part of the bread wet. Cover and let rest in the fridge for at least 2 hours and up to about 8-9 hours overnight.
  • Bake: In the morning, preheat your oven to 350° F and bake the French Toast Casserole for 25-30 minutes. The casserole should appear baked and the centers of the bread appear set, and there should be no liquid evident in the bottom of the pan.
  • Serve + Store: Serve warm from the oven with powdered sugar, fresh berries, and maple syrup. Keep leftovers in the fridge for 3-4 days.
