For the Waffles
2largeeggs, divided
1/4cupsalted butter
3tbspmaple syrup
2cupsmilkI used 2%

4largeapples, sliced5 and 1/2 cups, I used a mix of honeycrisp an golden delicious
3tbspsalted butter
1/2cupbrown sugar, packed
1 and 1/2tspcinnamon

Instructions
Make the Waffle Batter: Separate the egg yolks from the whites, keeping the egg yolks in a spare measuring cup in the fridge for later. In a large mixing bowl, add the two egg whites and mix with an electric mixer on high speed until stiff peaks form (a few minutes). Scrape the stiff egg whites into a small bowl and pop in the fridge for later. Give the large mixing bowl a quick wipe with a clean kitchen towel, and add the butter. Melt the butter, then whisk in the maple syrup. Whisk in the reserved egg yolks, milk, and vanilla. Add the flour, spices, salt, and grated apple (a box grater makes this easy) and stir until the last streaks of dry ingredients disappear. Gently fold in the beaten egg whites with a spatula just until the last white lumps disappear, although you may still have a few white specks throughout the batter (this is fine).
Cook the Waffles: Make your apple filling once the waffles are cooking - it's a great way to be efficient while you wait for each batch to cook!Heat your Oster® DiamondForce™ Belgian Waffle Maker and spray with nonstick spray. Add one quarter of the batter and cook for about 5-8 minutes. Your cook time will vary depending on the waffle maker, so keep an eye on the first one (start with a small amount of batter as a test). The waffles will be golden when done.
Make the Caramelized Apples: Rinse (peel if desired) your apples. Slice into 1/2 to 1/4 inch slices. Add all the apple filling ingredients except the corn starch and water to a medium pan over medium high heat. Cook for 6-8 minutes, stirring lazily the whole time, until apples are softened to your liking. Add the corn starch and water to a small bowl, and stir until the corn starch is dissolved. Pour this into the apple filling, and cook, stirring, for 45 seconds to thicken. Remove from heat. Make-Ahead Tip: This can be done a day ahead.
Serve + Store: Serve the hot waffles while piping hot with the caramelized apples, butter, a drizzle of maple syrup, and even chopped nuts. Store leftovers of each the waffles and apples in an airtight container in the fridge for 2-3 days.
