I’ve talked about getting into breakfast ruts before (namely in this pumpkin streusel muffin recipe post) and that’s still something I struggle with. First thing in the morning, I’m usually craving chocolate or those leftover cookies from recipe-testing the night before.
Sometimes, that’s not the best way to start the day. I mean, if it’s your birthday and you have leftover birthday cake in the fridge by all means – have that for breakfast and CELEBRATE!
I usually end up reaching for some toast or I have eggs one time too many and then I can’t eat eggs again for a whileeee. Enter this rut-fixing breakfast superstar! It’s a 5-minute breakfast parfait with honey, granola, and fruit.
Remember that amazing homemade maple granola recipe that we made last week?
Well, that recipe serves as the base for this recipe! If you make a batch of granola on Sunday, you’ll be able to make this super-fast, super-delicious breakfast any morning during the week with minimal time and effort!
Let’s talk ingredients!
There’s that homemade maple granola, of course! It’s made with oats, spices, shredded coconut, walnuts (optional) and, of course, maple syrup! It tastes like a spiced oatmeal cookie! YUM. You can see now why I love this recipe, right? I crave cookies for breakfast, and I trick myself with this granola that tastes like a cookie!
We’ve also got sliced bananas, a handful of fresh raspberries, greek yogurt (or any other type of yogurt you prefer), and a healthy drizzle of honey! Really – that’s it! It’s that easy. Pretty healthy too, if I do say so myself!
Plus, you get to play with honey and that’s always fun! If you don’t have one of those little honey-drizzler wands, you NEED one. It is so fun to use! Okay, you don’t really need one – but it will make you feel like a breakfast boss!
Also, may I recommend assembling your breakfast parfait in a stemless wine glass, if you have one, because it will make you feel SO FANCY. So fancy. But so simple. And, delicious!

5-Minute Breakfast Parfaits with Honey, Granola, and Fruit
Ingredients
- 1 handful of my homemade maple granola
- 1/2 cup greek yogurt
- 1/2 of a banana, sliced You can freeze the other half and use it later in smoothies!
- 1/4 cup fresh raspberries
- 2 tbsp honey
Instructions
- Add the yogurt to your bowl or glass. Top with the granola, banana slices, raspberries and a drizzle of honey. Enjoy!

Oh my goodness! I’m dying laughing because I thought I was the only one stumped on breakfast all the time! And the only one who wanted to eat leftover dessert from recipe testing the day before.
