Pears might not be the first thing that jumps into your mind when you think of a dessert pizza, but hear me out – pears are the unsung hero of fall! They’re just as versatile and delicious as another fall fruit that tends to hog all the attention. Plus, caramelizing pears takes only a few minutes since they’re a much softer fruit to begin with! The soft, spiced pears pear perfectly (sorry, that was unavoidable, hehe) with the lightly sweetened, crisp crust, and the melt-in-your-mouth streusel on top.

Let’s learn how to make this Deep Dish Pear Dessert Pizza!

First, mix up a quick pizza dough and let it rise for one hour – here’s what it looks like before the rise.

While your dough is rising, make the pear filling! It’s made up of fresh sliced pears, a little butter, flour, cinnamon + other fall spices, and brown sugar. Cook it for a few minutes and you have the most amazingly delicious caramelized pear filling!

Once your dough is ready, press it into a well-greased pan (any 9-inch round pan will work!)

Spread the pear filling over the dough, trying to keep as much excess liquid as you can behind in the pan.

Lastly, sprinkle on a flurry of cinnamon streusel! It might seem like a lot of streusel, but use all of it.

Bake this beauty up (it bakes in just about 18 minutes – so fast!) and drizzle on a quick glaze made with melted butter, powdered sugar, a splash of maple syrup, and a hint of vanilla. It’s so dreamy – and it’s the perfect way to finish off this pear pizza!

Deep Dish Pear Dessert Pizza with Cinnamon Streusel

Ingredients 

For the Pizza Dough

  • 1/2 cup warm water
  • 1 TBSP granulated sugar
  • 1 and 1/4 tsp active dry yeast
  • 1 and 1/4 cups all-purpose flour
  • 1 tbsp olive oil
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract

For the Pear Filling

  • 3 medium ripe pears, about 4 cups, sliced
  • 1 and 1/2 tbsp salted butter
  • 2 tbsp all-purpose flour
  • 1/3 cup brown sugar, packed
  • 1 and 3/4 tsp cinnamon
  • 3/4 tsp ground ginger
  • 3/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/8 tsp allspice
  • a pinch of salt
  • 1/2 tsp vanilla extract

For the Cinnamon Streusel

  • 3 tbsp cold salted butter
  • 2 tbsp + 1 tsp olive oil
  • 1/2 cup + 2 tbsp all-purpose flour
  • 1/4 cup white whole wheat flour, can sub for all-purpose
  • 1/3 cup brown sugar, packed
  • 1/4 cup granulated or cane sugar
  • 1/4 tsp salt
  • 1/4 tsp cinnamon

For the Glaze

  • 2 tbsp salted butter, melted
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 cup powdered sugar
  • tiny pinch of salt + cinnamon

Instructions 

  • Make the Pizza Dough: Add the warm water and tablespoon of sugar to a medium bowl and whisk together. Add the yeast and don't mix – let sit for 5 minutes. It should be kind of creamy and foamy looking. Stir in the flour, olive oil, cinnamon, salt, and vanilla until a shaggy dough forms.
    Flour your counter and dump the dough out. Lightly flour the dough and begin kneading it – knead it for 5 minutes. Set a timer! Once you're done kneading it, spray the same bowl (no need to clean it out) with nonstick spray and shape the dough into a ball. Set it in the bowl and cover with a kitchen towel. Let rise for 1 hour.
  • Make the Streusel: While the dough rises, make the streusel. Blend all streusel ingredients together in a food processor until crumbly and clumping together. Set aside.
  • Make the Filling: While the dough rises, make the filling. Rinse and slice your pears into 1/4 to 1/2 " thick slices. Add all filling ingredients to a medium or large nonstick skillet over medium heat. Set a timer for 4 minutes – cook the pears, gently stirring with a silicone spatula. Once the time is up, turn off the heat and remove the pan from the burner.
    Preheat your oven to 425 degrees F.
  • Assemble the Pizza: Once the dough has risen, plop it into the greased pan and press it out and up the sides a bit. Spoon the pears (leaving behind most of the excess liquid) over the crust and sprinkle the streusel on top. It may seem like a lot of streusel but use it all – trust!
  • Bake: Bake for 18 minutes. The edges of the crust and the streusel will be golden brown.
  • Make the Glaze: Just before the bake time is up, mix up the glaze. Melt the butter in a small bowl and whisk in the remaining glaze ingredients.
  • Serve + Store: Drizzle the glaze over the warm pizza and enjoy! This is best while it's fresh and hot from the oven, but leftovers can be covered + stored in the fridge for a few days. Reheat slices in the microwave.

Notes

NOTE: To determine if a pear is ripe, gently press against the top of the pear, near the stem. If you can indent it and it feels soft, it’s ripe! If you buy pears that aren’t ripe, let them sit out on the counter for a few days to ripen. Once ripe, keep in the fridge until you’re ready to use them!

    I think your measurements are off with the crust. This is as far as I have gotten and the crust is so wet you canโ€™t kneed it at all. Iโ€™ve added another half cup of flour and itโ€™s still moist.

      Hi Denise!

      I’ve made this every time without issues, as have other people. I had my assistant re-test the recipe as well and it turned out fine. Did you double check that you measured everything correctly? Other than that, I’m not sure what would be going wrong, since this recipe has never had that issue before.

    I canโ€™t think of a better way to enjoy pears then this pizza. Anxiously waiting!
