no bake mint chocolate pie

March 13, 2020 Leave a Comment

This No-Bake Mint Chocolate Pie requires only 8 ingredients and less than an hour to make! This dessert has a luscious, creamy mint chocolate mousse-like filling nestled inside a no-bake oreo crust, and it’s topped off with chocolate whipped cream and crushed andes candies. The perfect St. Patty’s day treat!

It’s almost St. Patrick’s Day and I am so excited to share this dessert with you! I know some of you love your cheesy green food, but let me convince you to give this pie a try! (Hah, I didn’t mean to rhyme). It has all the fun flavors we want in a St. Patty’s Day dessert – mint, chocolate, and ahem, more chocolate – without any artificial green colors.

This dessert is super simple to whip up – all you need are oreos and butter for the crust, along with chopped chocolate, heavy whipping cream, mint chocolate candies and mint extract for the filling.

How to Make No-Bake Mint Chocolate Pie:

First, make chocolate ganache by pouring simmering heavy cream over chopped chocolate and stirring it together. Next, make whipped cream – then fold the two things together! Delicious, and theraputic.

Spread this mixture into the prepared crust, and chill while you prepare your chocolate whipped cream!

I made a little extra whipped cream and added cocoa powder and powdered sugar for a lightly sweetened chocolate whipped cream. A sprinkle of crushed andes candies along with the chocolate whipped cream made the perfect finishing touch!

You could also drizzle melted chocolate over the top of the pie, or you could add green food coloring to the whipped cream if you’re reallyyy digging the green food situation.

Regardless – I absolutely think you should make this Mint Chocolate Pie for St. Patrick’s Day. Make it a meal – start with some classic Irish Stew and a slice of Skillet Soda Bread! Turn on the tunes, (may I recommend Leahy or Natalie MacMaster?), and enjoy!!

Note: This recipe can even be made gluten-free by using gluten free chocolate sandwich cookies or gluten free chocolate graham crackers for the crust!
